Blackstrap molasses is derived from the sugar cane refining process. The sugar cane is mashed to extract the juice which is then boiled to create cane syrup. A second boiling results in ordinary molasses. But a third boiling makes "blackstrap" molasses, which is extremely dark and ultra-thick.
